A food dehydrator is a gentle oven with a fan: it holds food at a low, steady heat while warm air carries the moisture away. Apple rings, mango, mushrooms, garden herbs and jerky are the usual starting points; the word jerky comes from ch’arki, the Quechua word for dried meat. Stacking models pile trays one on another; cabinets are boxes with stainless steel trays inside.

A batch takes hours rather than minutes, so every one here has a timer to switch itself off. Stacking dehydrators take less room, and their trays can sit higher for thick slices; cabinets take more worktop and cost more, but have a window to watch through.

What matters

  • A thermostat low enough for herbs, high enough for jerky.
  • Tray size as well as the number of trays.
  • Dishwasher-safe trays.
  • BPA-free trays, if they’re plastic.

#1Nebula 6-Tray Stainless Steel Food Dehydrator (400W)

£84.99 RRP

Best overall

8.9/10Picked Rating

Six stainless steel trays in a cabinet with a rear fan and a window to watch the batch through, so there’s no need to open it up to check; the touch panel runs from 35 to 70°C, with a timer of up to 48 hours.

What owners say: Owners find it quiet enough to leave running, with plenty of room inside, and say the trays and touch buttons wipe clean in moments.

A closer look: After sticky fruit or marinated meat, the trays can go straight in the dishwasher. Set the timer in half-hour steps so it switches itself off overnight, and leave a little space between slices so air from the fan at the back can move across every tray.

  • Window to watch the batch
  • Dishwasher-safe trays
  • Rear fan blows across trays
  • Touch control panel

Best for: Fruit and meat, dried overnight

#2SousVideTools 6-Tray Stainless Steel Food Dehydrator (SVT-12005)

£129.00 RRP

Best for big batches

9.1/10Picked Rating

A catering-style cabinet, the same 650W machine as Hendi’s Profi Line dehydrator for professional kitchens, with six large stainless steel trays, a clear door and a thermostat that goes up to 75°C.

What owners say: Owners like the solid stainless steel build and the touch controls, which make the time and temperature simple to set, and say it runs quietly.

Heads up: Measure the worktop first: it’s a catering-sized box, nearly half a metre deep, so it needs more room than a stacking dehydrator. That size is why the Nebula cabinet, with smaller trays, is ranked above it.

A closer look: Temperature moves in five-degree steps and the timer in half-hour steps, so a long jerky run can finish while you sleep. The stainless trays lift out for washing, and the maker is clear that it’s a dehydrator only, not a freeze dryer.

  • Clear door
  • Two-year warranty
  • Also sold for professional kitchens

#3Aigostar Crispy 5-Tier Food Dehydrator (12YXA)

Best compact

8.5/10Picked Rating

A compact stacking dehydrator, under 23cm wide, whose clear trays sit at two heights for thin apple rings or chunkier pieces, with a 99-hour timer on its LED panel.

What owners say: Owners say it runs more quietly than they expected, and one finds herbs keep their colour as they dry, though a few report one stopping working altogether.

A closer look: Aigostar suggests a half-hour run with the trays empty before the first batch, then a rinse and an air dry. Use the taller tray spacing for thick slices and the lower one for herbs and thin fruit, and put the trays in the dishwasher afterwards.

#4Andrew James Digital Food Dehydrator (6 trays)

£52.99 RRP

Best budget

8.4/10Picked Rating

Six large BPA-free trays and 550W, the most power of the two stacking models here, with a digital thermostat from 40 to 70°C and a 48-hour timer for overnight batches.

What owners say: Owners like how much the six trays hold and find the controls easy to work out without the manual, though some find it slow to dry and opinions differ on how noisy it is.

Heads up: Cut slices evenly and not too thick: drying time depends a lot on thickness, so check the trays rather than going by the clock.

A closer look: It dries with warm moving air, so it’s a dehydrator only, not a freeze dryer, whatever some listings call it. The trays lift off for washing by hand, and dehydrator sheets, which it takes, stop fruit purée for fruit leather dripping through the mesh.

  • Trays stack at different heights
  • Takes sheets for fruit leather
  • Digital thermostat
